Gigantuous Pesto Palmier BFG Ears
We’ve teamed up with our very own HUMAN BEAN, the top BBC Food Show and Brompton Cookery School chef Marcus Bean, to bring you these BFG inspired recipes to celebrate our Bath, Book & Bedtime range launching in to Waitrose.

Makes 12-14 regular sized ears or 1 BFG sized ear
50g fresh coriander or spinach
2 cloves garlic
15g nuts (pine nuts, almonds, cashews etc.)
20g parmesan grated
100ml rapeseed or olive oil
375g ready rolled puff pastry
Freshly grated parmesan or cheddar cheese
1 egg yolk, beaten with 1 tbsp milk
Preheat the oven to 180°c
Pesto – whizz together all the ingredients in a blender or spice grinder.
Spread a layer of your pesto all over the pastry and grate some cheese over the top.
To make your ear shapes, starting at one of the long edges, roll the pastry up tightly to the centre, then repeat on the other side.
Slice the rolled pastry into slices about 1cm thick. Once sliced turn the slices onto their side and place on a tray with baking paper. Gently atten the slices so you see the rolls of pastry, then brush with the egg and bake in the oven for around 20 minutes until golden and crisp.
Grate fresh parmesan over the top just as they come out of the oven. Leave to cool on a wire rack and eat when cool enough.
If your oven is large enough you could make them to BFG ear size, if not do scale them down to t in your oven.
